Our coffee is roasted fresh multiple times a week. It is packaged and sealed 1-2 hours after roasting. We package in bags that have the one-way valve to release the gas that comes off the coffee, but does not let oxygen in. It is not pre-ground sitting on the shelf as it is ground to order!
