Classic Blueberry Grunt Recipe

It's blueberry season, and this Blueberry Grunt recipe is one way to make the most out of the abundance of blueberries provided by our local British Columbia farmers. 

  

There's so many ways to enjoy this nutritious fruit and today’s recipe is going to provide you with simple instructions on how to prepare an easy and delicious Blueberry Grunt!  So, without further ado - ready, set...dessert!

 

You will need the following ingredients:

 

Blueberry Mixture  

 

4 cups of fresh blueberries (we recommend purchasing organic and fresh blueberries from local farmers) 

¾ - 1 cup of sugar  

1/2 cup of water  

1 teaspoon cinnamon  

1 teaspoon of lemon or lime juice  

 

Grunt  

 

2 cups all-purpose flour  

2-4 teaspoons baking powder  

1/2 cup sugar  

1/2 teaspoon salt  

1/2 cup of butter  

1 egg  

¾ - 1 cup of milk  

Ice cream, optional  

  

Instructions  

 

Step 1  

 

Add the sugar, water, and blueberries into a medium to large pan and use a spoon to stir and mix the ingredients. Cover and leave to boil until the blueberries obtain the consistency of a jam.  

 

Step 2  

 

Once the desired consistency is achieved, remove the pan from the stove and add the lemon or lime juice along with cinnamon. Leave to simmer at low heat.  

 

Step 3  

 

Add the flour, sugar, baking powder, salt into a bowl and mix. Add butter and milk. Mix once more until a soft dough is formed.  

 

Step 4  

 

Using a tablespoon, scoop the dough and drop them into the blueberry mixture until you have a desired amount of dough in the mix.   

 

Step 5  

 

Increase the heat on the pan from very low to medium heat and cover it. After 15 minutes of simmering, use a toothpick to poke into one of the dollops. Do not remove the pan from the heat until the toothpick comes out clean after poking the dough. That’s how you will know the dough has been cooked to perfection.  

 

Serve the Blueberry grunt on a plate or bowl and add a scoop of your favourite ice cream on the side. Enjoy and do a little dance because it tastes that good!
