Black Bean & Quinoa Veggie Burger

Prep: 20-30 minutes

Cook Time: 35 minutes

Serving size: 4

 

Ingredients:

 

¼ Cup Tri-Colour Quinoa (Avafina Organics)

½ Cup Vegetable Broth

1 15 oz Black Beans (Western Rice Mills)

Buffalo Cheddar Cheese (Goat’s Pride Dairy)

1 Cup Golden Chanterelles Mushroom (West Coast Wild Foods)

1 Red Bell Peppers

1 Medium Sweet Onion

½ Tsp Olive Oil (All of Oils)

½ Cup Rolled Oats (Not steel cut oats!)

1 Organic Egg (Coligny Creek)

3 Garlic Cloves (River’s Edge Garlic)

Salt and Pepper

¼ Tsp Cayenne Pepper (Avafina)

 

Toppings:

 

Butter Lettuce

Microgreens (PureLand Microgreens)

Tomatoes

Avocado

 

Directions:

 

STEP 1

Preheat oven to 400 degrees.

 

STEP 2

In a large pot over high heat, add vegetable broth and bring to a boil. Add quinoa and stir until well mixed. Simmer on medium to low heat and cover with a lid for 15 minutes. Set aside and let cool once fully cooked.

 

STEP 3

In a large mixing bowl add black beans and mash with a fork leaving the consistency to be random for texture. Do not over smash!

 

STEP 4

Add minced garlic, diced onions and green peppers to the mixing bowl and mix until combine. Very carefully add cooked quinoa to the bowl one scoop at a time while stirring.

 

STEP 5

Add rolled oats and stir, then add the egg to combine everything together. Season with salt, pepper and cayenne pepper. Mix well. Divide mixture into 4 sections to form equal patties.

 

STEP 6

Using your hands, gently roll the mixture until everything is combined. Form patties by gently pressing down the mixture between your palms making sure each side is at an even thickness.

 

STEP 7

Place all 4 patties on a non-stick baking sheet and bake for 30 minutes. Gently and carefully flip patties halfway through.

 

STEP 8

While the patties are baking in the oven, in a medium nonstick skillet over medium heat, add chanterelle mushrooms and sauté for 3-5 minutes until cooked and soft. Set aside.

 

STEP 9

Once the patties are done baking, very carefully remove the baking sheet from the oven and place it on the counter. Add sautéed mushrooms on top then add cheese. Place baking sheet back into the oven for an additional 2 minutes until cheese has melted.

 

STEP 10

Serve patties on a bun, pita wrap or even lettuce then add desire toppings!

 

Recipe Notes:

 

For a healthy, juicy alternative and to keep the burgers moist, burgers are best baked in the oven! Substitute black beans for chickpeas or for a more complex taste combine together.

For this quick and easy recipe, it is recommended that you pre-wash and soak your black beans a minimum of 4 hours up to overnight the night before for maximum softness!
